Honey and Mustard Salmon

If you're looking for a simple and delicious, yet slightly indulgent, dinner then this recipe is for you.

Grey pasta bowl with pasta, covered in a white creamy sauce with mushrooms and peaces, topped with an orange salmon fillet.

Serves 2-3

  • Olive oil

  • 2-3 fillets salmon

  • 2 garlic cloves, finely diced

  • 100g mushrooms, sliced

  • 100g frozen peas

  • 1 lemon, juiced

  • 1tbsp honey

  • 1tbsp wholegrain mustard

  • 250g mascarpone

Serve with pasta, rice or noodles

1. Over a medium heat, add the olive oil to a large frying pan and gently heat for a minute. Add in the salmon. Fry the salmon until just about cooked in the middle - about 8-10 minutes, depending on the size of the salmon fillet. Once cooked, remove from the pan, and set aside.

2. In the same frying pan, add the mushrooms, garlic and peas. Fry for 5 minutes, until the mushrooms start to soften.

3. Add the lemon juice, honey, wholegrain mustard and mascarpone into the pan. Mix until everything is combined.

4. Plate up with a portion of pasta/rice/noodles, salmon and top everything off with the mascarpone sauce.
