These pancakes are super simple to make on a day where you have a bit more time in the morning. For me, pancakes are perfect for breakfast since you can change up the toppings each time. My favourite is greek yoghurt, berries and Sweet Freedom caramel syrup. Make sure you try and stick to seasonal fruits or switch to frozen varieties when out of season.

Ingredients
1 small banana or 3/4 large banana (Use the rest to top the pancakes)
1 egg
50g plain flour
15g oats (can leave whole or blend into a 'flour')
3/4 tsp baking powder
1/2 tsp vanilla extract
Olive oil, for frying
Recipe
Mash the banana in a bowl.
Mix in the egg, plain flour, oats, baking powder and vanilla extract until combined.
Heat a pan over a medium heat. Drizzle some olive oil in.
Once hot enough, put a large spoon of the mixture into the pan.
Cook on one side until the top starts to bubble. Flip once this happens and fry until firmed slightly and golden brown on the outside.
Repeat with remaining batter.
Top with your favourite toppings.
