If you love the idea of dessert for breakfast, then you must try by warming blueberry breakfast crumble. It's easy to make, packed full of nutrients and much lower in sugar than a standard crumble recipe.
Serves 4
Ingredients
350g frozen blueberries
Dash of lemon juice
150g oats
50g mixed seeds (or nuts)
80g nut butter (I used almond buter)
1tbsp maple syrup

Recipe
1. In a bowl, mix together the oats, mixed seeds, nut butter and maple syrup, until everything is combined well.
2. Pour the frozen blueberries into an ovenproof dish, and pour a dash of lemon juice on top.
3. Evenly spread the crumble mixture on top of the blueberries, and pat down.
4. Bake in a preheated fan oven at 180 degrees celcius for 20-25 minutes, until the blueberries have started oozing juices and the top is golden brown.
5. Leave to cool for one minute, and serve with yoghurt of your choice.
