Cranberry Gingerbread Loaf


  • 100 olive oil

  • 100g molasses or treacle

  • 150g self raising flour

  • 2tsp ground ginger

  • 1tsp mixed spice

  • 150g dark brown sugar

  • 1tsp bicarbonate of soda

  • 150ml milk

  • 2 large eggs

  • Large handful of cranberries


  1. Preheat a fan-oven to 180C.

  2. Mix together the self raising flour, ground ginger, mixed spice, dark brown sugar and bicarbonate of soda until combined.

  3. Add the milk and eggs to the dry ingredients and combine to form a thick batter.

  4. Mix in the olive oil and molasses/treacle and cranberries. Mix until completely combined.

  5. Pour into a lined loaf tin.

  6. Bake for 30-40 minutes or until cooked through and a skewer comes out clean.

  7. Leave to cool before slicing.
