These are the dreamiest dairy-free blondies. If you've never had a blondie before, then please try these - I'm sure you'll be converted!
Serves: 9-12
Ingredients
200g Dairy-free white chocolate (I used The Free From Kitchen's White Chocolate)
170g Dairy-free margarine (I used Stork Margarine)
210g Light brown sugar
3 large eggs
150g Plain flour
1/4tsp Baking powder
2-3tbsp Smooth Biscoff spread
1 pack of Biscoff sandwich biscuits
Recipe
Preheat an oven to 180C fan. Line a square tin.
Melt the white chocolate and margarine in a pan over a low heat until melted. Be careful it doesn't burn!
Transfer the mixture to a bowl and whisk in the light brown sugar.
Whisk each egg in separately until combined. Whisk for another minute.
Whisk in the plain flour and baking powder.
Mix until combined.
Transfer the mixture to the lined tin.
Melt the biscoff spread in the microwave until liquid.
Drizzle the biscoff spread over the blondie batter.
Add the Biscoff sandwich biscuits on top (you can squish these down a bit if wanted)
Bake for 20-25 minutes (you may need less or more time, depending on your oven)
Leave to cool before cutting.
