These might be my best brownies yet - decadent and fudgy, exactly how a brownie should be. But these aren't just any normal brownies... they have a secret ingredient! The key to the fudginess in these brownies is the addition of fibre and protein packed butterbeans. Butterbeans might not seem like your usual brownie ingredient, but trust me when I say you can't taste them and they really do create the most delicious, decadent fudgy brownies.

Ingredients
60g margarine/plant-based margarine
400g tin butterbeans, drained
2 eggs
1tsp vanilla extract
100g caster sugar
80g cocoa powder
1/2tsp baking powder
80g dark chocolate (70% +)
Recipe
Preheat a fan oven to 200 degrees celsius.
Blend together the margarine, drained butterbeans, eggs, and vanilla extract until smooth and combined.
In a bowl, sieve the sugar, cocoa powder and baking powder together.
Melt the chocolate and add it to the dry ingredients, alongside the blended bean mixture.
Mix everything together until everything is combined. Do not overmix.
Spread the brownie mixture into a lined small square tin.
Bake for 20 minutes. The brownies are fudgy so may not feel completely "cooked"
