Coconut and Lime Oat Bars

I love a granola or oat bar - but so many of the shop ones are packed full of sugars and extra ingredients that just don't feel necessary, and they're just not very filling. As a result, I like making my own snack bars from scratch - but I felt tired of the same old flavours, which is when I got the idea for this more tropical combo.


These bars are super simple to make - why not batch make and freeze them, so you always have some to hand? They're packed with fibre, protein and healthy fats - making them a super filling and steady source of energy, perfect for an afternoon pick me up, especially at menopause. Plus, with at least 8 different plants in this recipe, you'll keep your friendly gut bugs happy!

Ingredients

  • 20g chia seeds

  • 50g desiccated coconut

  • 40g flaxseed

  • 35g mixed nuts, roughly chopped

  • 110g oats

  • 60g honey

  • 80g peanut butter or almond butter

  • Juice of 1 lime

  • Zest of 1 lime

  • 40ml water (may need less or more; add slowly to check consistency)


Recipe

  1. In a large mixing bowl, mix together the chia seeds, desiccated coconut, flaxseed, nuts and oats.

  2. Over a medium heat, gently heat honey and the nut butter until combined and “loose” in texture.

  3. Poor the honey and nut butter mixture onto the dry ingredients. Add the lime juice, lime zest and splash of water. Mix together until everything starts sticking – add the water slowly as you may need more or less.

  4. Pour the mixture into a lined square tin, and compact down using a metal spoon.

  5. Leave to chill in the fridge for one hour, before cutting into 8 squares.
