Mackerel Buddha Bowl

My easy go-to recipe for lunch when I'm looking for something quick but still nutritious and delicious. This speedy lunch is packed full of protein, omega 3, fibre, vitamin C and plenty of other vitamins, minerals and antioxidants.

Serves 2


  • 1 Bag rocket, spinach and watercress salad

  • 1 Red bell pepper

  • 14 Cherry tomatoes

  • 1/2 Large avocado

  • 200g Smoked mackerel fillets

  • 250g Microwave brown rice

  • Drizzle of balsamic vinegar


  1. Dice the red bell pepper, quarter the cherry tomatoes and cube the avocado.

  2. Heat the microwave brown rice in the microwave as per the instructions on the packaging.

  3. Dish up each plate by adding half of the salad, red bell pepper, cherry tomatoes and avocado to one side of the plate. Once the rice is heated, add half of this to each plate.

  4. Place 100g (Roughly 1-1.5 fillets) of smoked mackerel fillets on top of each plate.

  5. Finish with a drizzle of balsamic vinegar, and any other sauces or seasonings you desire.
