As much as I enjoy a sweet treat, sometimes I like to switch things up with a savoury snack. These mini doughnuts are just as fun as any sweet treat - and they taste like pizza too, so it's an added bonus!
If you don't have a mini doughnut tin, don't worry! Simply bake these like cupcakes - they'll just need longer, so keep an eye on them! (Tip: If you're making cupcakes, add more tomato to enhance the flavour further!)
Makes: 30 mini doughnuts
Ingredients:
-110g plain flour
-1tsp baking powder
-1tsp garlic granules
-1 egg
-1tbsp yoghurt
-100ml milk
-5 cherry tomatoes
-1/2 mozzarella ball, diced into small squares
-30g cheddar, grated
-Black pepper
Recipe:
Mix the flour, baking powder and garlic granules until evenly distributed.
Add the egg, yoghurt and milk. Stir until a batter forms.
Dice the cherry tomatoes into small pieces and fry in a pan (this helps remove some of the water) for roughly 5 minutes.
Mix in the mozzarella squares, grated cheddar and diced tomato with freshly ground black pepper.
Grease a mini doughnut tin (or line a cupcake tin) and pour the batter into it.
Cook for roughly 5-8 minutes at 180C, or until cooked through and brown (Cupcakes will take longer).
Pop them out of the tin and eat warm or leave to cool.
Tip: Switching to lower fat dairy products will help reduce the fat content (particularly saturated fat)!
